Healthy after school snacks, chocolate cupcakes!

With the beginning of the school year I get to think up new ways of giving my kids healthy after school snacks, everyone loves a good cupcake and although I don’t want to give them too many I found a way to make some recipies much healthier, roll on the clean eating chocolate cupcake!

I have modified a recipe I had for chocolate cake to make it a much healthier option with lots less fat and sugar, it is clean eating for everyone! plant based vegan yumminess! they must be very good because I need to stop the kids at two each!… also they kind of look very ‘mushroom’ like… they love them!

Here is the recipe:

Dry ingredients:

  • 1 and 1/2 cups all-purpose flour
  • 3/4 cup coconut sugar
  • 1/4 cup unsweetened cocoa
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt

Wet ingredients:

  • 1 cup non dairy milk, I used soya but you can use any nut milk too
  • 1/4 of melted coconut oil
  • 1 Tablespoon of apple vinegar
  • 1 teaspoon vanilla

Mixed all the wet ingredients on one bow and the dry ones on another, poor the dry onto the wet ingredients bow and fold the mixture until well combined, don’t over mix. I bake them on a preheated oven at 280 C (350 F) for about 20 minutes and that is it!
